Our building, a miraculous survivor of history,
preserves the elegance of a bygone era,

About Our Mizutaki

Our signature white soup has been crafted
using the same protected method for generations.
We slow-cook chicken bones using only pure well water
drawn from our own grounds.

The rich color and profound depth of flavor—
achieved only through immense time and patience—
are why our hot pot has been
beloved for centuries.

Our History

Toriyasa exterior

Founded in 1788, Toriyasa began as a poultry shop (known as Kashiwa-ya) opened by our first-generation founder, Yasuke. It was the second generation, Yasaburo, who first served chicken dishes on the second floor using the shop's fresh poultry. The mizutaki he introduced became so celebrated that it has remained our signature dish since then.

Our building is a rare historical treasure which survived two great fires that leveled most of Kyoto: the Great Fire of Tenmei (1788) and the Great Fire of Genji (1864) during the Kinmon Incident. From the addition of the mezzanine rooms in the late Edo period to the riverside seats built in the early 1900s, the structure has evolved slightly over time, yet its soul remains untouched.
